Every detail is accounted for: an heirloom fit transition where bolster meets ebony is complemented by a broad face at the curvature of the blade’s choil where the middle finger rests comfortably in the pinch grip, elements that complement each other visually, as well. Thin and hard at the edge below slightly convex bevels, the 253mm / 10″ blade stands 64mm tall at the heel, a long, straight section of the edge’s upswept, Western profile ideal for chopping, leaving the curved belly and fine tip perfect for slicing and detail work. Especially thin at the edge, this dynamic and versatile full-size chef knife is weighted and steady in the hand, its center of mass lying just in front of the bolster’s silver inlay, giving the blade a quick and nimble feel on the cutting board.
