Approachable while elegant, hand-hewn while refined. These dualities describe much of Martin Huber’s work, but perhaps not to the degree that this chef’s knife delivers the best of all worlds to the chef’s hand. Everything this Austrian bladesmith creates is first and foremost a tool built to do a job, the geometry and balance of this 228mm / 9″ blade designed for unequivocal performance including the tall, convex bevels that slim to a very thin, razor-sharp edge, and the full-distal taper along the rounded spine that ends at a glass-thin tip as fine as the most detailed slicing work can demand. Balanced a hair’s-width in front of the handle, the blade moves naturally and effortlessly in the hand with a finish that combines rustic, forge-finished flats with etched and polished bevels revealing the beautiful contrast of pure nickel and carbon steel cladding over a core cutting edge of dark, 1.2419 high-carbon steel. The artistic touches, though, are only just beginning. For the handle, a tapering blade tang is first layered with carbon fiber, then a thin strip of white G10, and then black G10. Atop these layers, behind bolsters of black, are two exquisite pieces of fossilized mammoth molar with as much character and depth as any we have seen. For a one-of-a-kind culinary tool that sacrifices neither form nor function, Martin Huber delivers.
