You might say we saved the best for last. From Jeramie ‘Jezz’ Heywood’s latest delivery of big, bold copper-infused nakiris comes the final offering, a 207mm beauty clad in multiple layers of reclaimed, vintage saw-blade wrought iron, mild steel, nickel, and of course, copper. Jezz’s final etching and polishing of the tall, symmetrical, convex blade bevels reveal a range of shades and hues throughout the cladding, all atop a core of Aogami Super high-carbon steel. At the edge the Aogami is thin, hard, and very sharp, backed by the weight and mass of this 13.3oz / 378g tool, making it a chopping machine ideal for countless hours of vegetable processing in home or professional kitchens. Purposeful texturing combined with the hand-hewn finish, a result of the forging hammer’s many blows, mark the blade’s flats and tang and tell the story of its handcrafted origins. The rounded blade spine and thoughtfully shaped choil above the 61mm-tall heel make this rather large chef’s knife exceedingly comfortable in the pinch grip. To support a range of cutting styles and hand sizes, a long, tapering handle is shaped from Jezz’s own house-made material, a composite fashioned from recycled plastics. At the font of the handle, just behind the spotted gum wood collar that hugs the blade’s tang, are two recessed, textured areas, and capping the build at the rear of the handle is a darkened copper finial.
