California bladesmith Don Carlos Andrade delivers yet another mid-size culinary knife designed for daily performance in the chef’s kitchen. A modified version of his well-loved kiritsuke profile, the hand-forged blade in 26c3 ‘Spicy White’ high-carbon steel, known for its clean alloying and fine grain structure, features a cloudy, differentially hardened, etched and polished finish as only Don produces. Measuring 159mm / 6.3″ long and 38mm tall at the heel, the razor-sharp edge will excel at any number of cutting tasks, from slices large and small, to chopping and dicing garlic, shallots, or nearly any other vegetable, to preparing a jaw-dropping charcuterie board. Don’s superb and pronounced convex geometry ensures cutting performance and food release while providing toughness for big and dense ingredients, while the rounded spine’s full-distal taper makes it a dynamic tool, the blade’s width slimming progressively toward the fine, pointed tip, perfect for detailed work. In a style all his own, tried and true for over a decade, comes a handle in Don’s shield-style wa handle rendition: four flat facets are joined together with gently curved sides, all of which taper from back to front for comfort and control, and finished with his trademark round inlay of translucent green G10 with matching front collar. A single, flush silicon bronze pin secures hidden-tang build.
