Emiliano selects W2 high-carbon tool steel, prized for its cleanliness from low alloying, the tough, hard edge it can take, its ease of sharpening, and its ability to show a beautiful hamon, the result of his careful, differential hardening process, water quench, and final polish and etch. Balancing a touch in front of the blade’s 50mm tall heel, this stunning tool is steady in the hand, moving naturally and easily, allowing the silky, convex, symmetrical bevels to move effortlessly through ingredients. Wide, rounded, polished, and rigid out of the handle, the blade’s spine tapers only slightly until the final inches where an especially thin, needle-like tip is its end point. The slim, razor-sharp edge is backed by enough material to stand up to demanding work, making this knife a fantastic daily workhorse for home cooks and professional chefs alike.
