Ebony Dragonfly Chef 270mm

The blade, forged from not-so-delicate metallic Dragonfly Wings, a damascus pattern of the maker’s design, is Salem Straub’s latest endeavor in functional, culinary art. Long in length and tall at the heel, this incredible creation delivers 270mm / 10.6″ of razor-sharp edge to the chef’s cutting board. Surrounding the Dragonfly Wings pattern to complete the K-tip chef’s profile are smoldering edge bars of Salem’s striking new Kabuto pattern damascus, together forming a complementary and complex entanglement of carbon steel alloys. These details are, however, mostly aesthetic in import and are backed by Salem’s impeccable geometry and balance, from the blade’s compound ‘S-grind’ bevels with wonderful convexity above a thin, hard, razor-sharp edge, to the slim, pointed, needle-like tip which sits low relative to the handle, perfect for slicing and detail work. Rounded and polished, the spine and choil offer comfort in any grip, while a stunning, hand-sanded satin finish and etch to reveal the intricacies of the damascus’ patterns provide silky, smooth surfaces. Forged from the same single pieces of steel as forms the blade, the elongated, integral handle bolster displays the details of the damascus steel’s many layers in yet another light. For comfort and control when wielding this one-of-a-kind tool, Salem sculpts a stunning piece of black & white ebony into a Western form that includes a combination of facets and rounded faces, separated from the bolster by an heirloom-fit ring of bronze. The handle is secured via a custom-made, mechanical retention bolt whose flush, polished, bronze cap is visible at the rear.
