Artistic form and purposeful function combine in a one-of-a-kind yanagiba by Spain’s Andrés Maldonado. With precise single-bevel edge geometry shaped for the right-handed user, long, exacting slices are achieved with consistency, whether in the hands of the sashimi chef or in the home kitchen. The fine, zero edge, below the blade’s front side’s (omote’s) bevel and back side’s (ura’s) subtly concave urasuki, extends 353mm / 13.9″ as it approaches the upswept sakimaru-style tip. The edge profile’s slight curvature assists in performing clean, delicate slices using one long, continuous motion. The tip’s shape offers additional versatility by extending the edge along a second plane; not to mention the attractiveness that is the sakimaru profile. Each of these finely honed technical elements are realized in a piece of steel crafted at Andrés studio in Córdoba that would turn heads in any form: a mosaic of firestorm damascus, rising like a flame from the embers against a dark, polished backdrop of 1095 carbon steel. To wield this striking tool atop the cutting board, Andrés has built a handle from ebony and solid brass, secured with a decorative pin and single brass pin, in tall, octagonal form with soft, comfortable transitions at every turn. Tapering from the back to a slim cross-section where handle meets blade, any hand and cutting style will appreciate the traditional form and handsome aesthetic.
