Meers Silver Hibiscus Gyuto 298mm

A rare opportunity to own a one-of-a-kind integral damascus chef knife by ABS Master Bladesmith Andrew Meers is here. In pristine, pre-owned, never-used condition, this stunning work of culinary art delivers a 298mm / 11.7″ blade of high-carbon, house-made damascus steel blade with Andrew’s compound ‘S-grind’ geometry to create a dynamic and powerful workhorse for the chef’s kitchen. With superb precision, the concave portion of the bevels begins at the blade’s spine and accounts for approximately two-thirds of the blade’s height (67mm at the heel) before transitioning to the convex portion, perfectly shaped as it tapers downward to a very thin, very sharp edge. Sturdy and weighted in the hand, the spine tapers just slightly until the final inches, the end of which is an extremely fine, needle-like tip perfect for slicing work. Then, there is the handle. The knife’s integral construction means a forged damascus bolster begins the combination of materials before giving way to a stepped, museum-fit piece of snakewood. The bolster has more of a story to tell, though: in two of the facets, Andrew, an accomplished metal artist of multiple disciplines, has inlaid engraved 999 fine silver. At the back of the tapered piece of snakewood is an end cap, also engraved with exquisite detail, giving the Hibiscus Gyuto its name. Finally, the butt cap’s retention nut cap has also been engraved.
