Forged in Austria from vintage, wrought iron-clad ApexUltra, a new, high-performance blade steel that the metallurgist and maker of this tool, Tobias Hangler, himself worked to develop from the ground up, comes a breathtaking new chef’s knife. The 237mm / 9.3″ blade exudes the touch of an expert, from superbly honed convex bevel geometry that is refined and dynamic, morphing from heel to tip with wonderful attention to nuance, as well as a steadily tapering, rounded and polished spine that culminates at a razor-thin tip, not to mention the etched finish and overall weight in the hand. The 58mm tall edge profile is that of a workhorse, able to rock on the board, perform long, precise slices, as well as detail work with a tip that sits low while still offering ample belly throughout the blade’s length for big cuts of big ingredients. Balancing just at Tobias’s maker’s mark stamped into the blade’s forge-finished flats, the knife feels powerful in the hand, able to tackle every job with ease, while remaining incredibly versatile due to the outstanding geometry in all senses. The desired balance is attained with the help of a tapering blade tang that spans the length of the comfortable, elegant, yet no-nonsense handle sculpted from yew wood that bares beautiful grain and color, secured by three, flush, stainless steel pins.
