Forged by hand from mind-bending mutated-X pattern carbon damascus steel of Charlie Ellis’ own design and making, this one-of-a-kind chef knife is available now in pre-owned, unused, like-new condition. A stand-out piece from the last several years through which Charlie has explored the outer limits of cutlery design, creating a small number of spectacular, functional works of art, this being one of the most incredible yet. Not only does the full size, 246mm / 9.7″ blade feature superb and pronounced compound ‘S-grind’ bevel geometry, a full-distal taper along the rounded spine, a thin, superbly heat-treated, razor-sharp edge, the same piece of exemplary damascus forms the first section of the head-turning handle as well. Faceted and tapered with stepped-down, heirloom fit up to the handle’s middle section, the damascus forms a bolster as comfortable to grip as it is beautiful to behold. Between steel and wood is a design element that helps define the knife’s aesthetic and matches the retention bolt’s end cap at the handle’s rear; a geometric layering of black Richlite and yellow micarta that mirrors the facets and shape of the bolster. Finally, again with heirloom fit attained through careful handwork, a gorgeous piece of curly oak completes the handle of this extraordinary tool.
