600-Layer Integral Petty 140mm

Forged at the hands of Emiliano Carrillo using time-tested traditional methods and years of experience comes a beautiful integral petty chef knife with purposefully designed, versatile, and elegant 140mm / 5.5″ blade. Forming both the blade and bolster is Emiliano’s house-made 600-layer carbon damascus steel created from 15n20 and 1084 alloys. Tapering steadily to a very fine, needle-like tip, the blade is nicely balanced, offering only a very small degree of lateral flexibility in the forward inches, and a thin, hard, sharp edge along its length. The bevels are convex, with the strength required for tougher cuts toward the back, and the delicacy for precision and detail work further up. Behind a simple, comfortable, wonderfully sculpted damascus bolster is a ring of G10 followed by an ergonomic and eye-catching handle of dyed and stabilized maple wood with striking grain and chatoyance.
