A robust blade, stiff and strong along a wide, rounded, tapering spine, and fine, pointed tip, make this knife ideal for precise cuts in tight spaces, deboning poultry (the profile’s traditional use in Japan), filleting fish, and preparing any protein with ease. The thin, sharp edge and tough, convex bevels are shaped from Aogami Super carbon steel clad with nickel and mild steel, forged by hand for us by Blenheim Forge in South London. A tapering, octagonal handle is formed of fumed oak and solid brass.
