Designed and built for daily use in kitchens large and small, with the nuances and sensibilities you expect from a world-class bladesmith, this 180mm / 7″ chef’s knife from Isaiah Schroeder is versatile, tough, and an absolute pleasure to hold. Balancing just at the blade’s tang in front of the octagonal, wa-style handle, this gyuto delivers the weight and geometry to do it all, from the toughest chops towards the blade’s heel, to the most delicate slices with the extremely thin, tapered, needle-like tip. High performance AEB-L stainless steel is durable and easy to care for, heat-treated in this case to HRC 62.5 for a very hard, sharp edge, with convex, belt-finished bevels below forge-finished flats that show the hammer marks of the knife’s forged origins. For comfort and control Isaiah pairs ziricote with koa wood, separated by a ring of copper, in a long, classic form as comfortable in the pinch-grip as any. A custom poplar saya is included.
