The largest Alsace style French chef knife by Don Carlos Andrade to date, this is The Big Alsace, designed to fill the hand with sheer cutting power. At 236mm / 9.3″, Don delivers a full-size blade shaped from high-performance RWL-34 stainless steel created by Damasteel in Söderfors, Sweden, built to tackle the largest cuts and most demanding daily kitchen work. Versatile, balanced, tough, and sharp, the silky, satin-finished blade’s bevel geometry is convex and pronounced, combining strength with a fine, razor-sharp edge that begins at a 50mm tall heel. As expected from Don, a nicely rounded, high-polished blade spine tapers steadily from a robust 3.6mm out of the handle to 2.7mm at the mid-point and onward to just 1.4mm an inch from the tip. The knife balances at the point that handle turns to steel, giving this large tool a weighted, capable, and steady feel on the cutting board. For comfort and control, inspired by Alsace knife handles of centuries past and brought to life by Don, a trained chef himself, with elements from his well-loved, shield-style wa form, vintage canvas micarta is sculpted with superb attention to detail and capped with this talented artist’s trademark, round inlays of translucent green G10. A cloth-covered saya is included.
