Wherever they land, there is an element to appreciate in every meal it helps prepare. Let’s start with the 130mm / 5.1” blade. Nearest the spine is forge-finished 304 stainless steel that transitions into a smooth, hand sanded section followed by a vein of pure nickel that mimics the form of the hammer marks above, as well as preventing carbon diffusion from the core layer, and finally culminating at a thin, sharp, 52100 carbon steel edge. Beyond its good looks, the blade is crafted to perform a wide variety of tasks including chopping larger vegetables with its 50mm tall heel, performing detail work with the slim, sharp tip, and slices of all variety with a gently curved edge throughout. To bring it all together is a well-designed handle that sits comfortably in the hand. A series of six pins plus a single, centered pin toward the rear, securing the ash to a frame of white micarta and the blade’s tang. A custom cherry saya is included.
