Quick and nimble in the hand, its head turning, all-business blade shaped from 30Crv2 high carbon steel, comes a 202mm / 8″ chef knife by Fingal Ferguson. At his studio in Ireland’s south-west, not far from Cork on the Gubbeen Family Farm, Fingal gives this full-size workhorse blade wonderful balance, slim and hard at the edge, with tall bevels, an aggressive tip, and versatile profile for chopping and slicing tasks alike, in a package that weighs just 5.9oz / 168g overall. The dark, forced-patina finish gives the tool not only added protection from oxidation during use, but a blackened, moody aesthetic we’re drawn to. For comfort and control in Fingal’s well-loved form is a handle sculpted from gorgeous poplar burl with front and rear end caps of black G10, all secured using a Loveless style stainless steel retention bolt.
