In folded iron clad san mai with Japanese Blue Paper carbon steel core, the gyuto from Blenheim Forge is a full-size 220mm / 8.7″ chef knife hand forged in Peckham, South London. Flatter toward the heel and sweeping up to a fine point, the blade measures 56mm tall, excellent for chopping on the board and slicing meats and vegetables, the thin, hard edge heat treated and quenched in-house easily moves through any ingredient. A handle carved from walnut fitted with a solid copper ferrule is comfortable and balances the knife beautifully.
