For his debut in our collection, bladesmith and artist Andrés Maldonado knows how to make a splash. Based in Córdoba in the south of Spain, the son of a blacksmith and lifelong metalworker, Andrés has created an exquisite piece of culinary art in this 235mm long by 70mm tall chef knife forged by hand from a house-made damascus pattern of his making, a high-contrast star pattern in 1095 and 15n20 carbon alloys. From a tapering, rounded spine the tall, symmetrical blade bevels slim downward to a thin, beautifully honed edge, hard and razor-sharp, shaped for versatility and cutting pleasure. Convex above an edge that balances finesse and strength to tackle all variety of daily kitchen work, the blade is large enough for the toughest ingredients, providing firmness and rigidity toward the heel with a slight amount of lateral flexibility as the pointed yet sturdy tip is approached. Every bit as beautiful, and functional as the blade, is the knife’s handle with its keyhole construction which sees the same Star damascus pattern, forged from the same piece of steel as the blade, extending back on top and bottom as it wraps around the sculpted piece of stabilized chestnut root. Full of grain and character, this organic material is the perfect complement to the intangible qualities of this tangible object. With single brass pin and finished with silky, high polish, shaped in a slim and elegant Western form to create an extension of the chef’s hand, the handle is the gateway to a one-of-a-kind cutting experience.
