Spain’s Andrés Maldonado awes and delights with his newest work of functional, culinary art. Forged by hand from a spectacular home-made carbon damascus pattern he calls Dandelion, Andrés shapes blade and bolster in a way that does proper visual justice to each intricate detail, twist, and turn within the material. Tall, convex primary bevels above a nicely honed edge that balances toughness and finesse are shaped for versatility, positioning this one-of-a-kind object to become any chef’s daily kitchen workhorse. Blade spine and choil are nicely rounded and polished for comfort in the pinch grip, the spine tapering steadily forward toward the pointed, needle-like tip. A dark, high-contrast etch of the blade reveals the damascus in striking detail, the layers of steel then condensing in on one another as the integral forged handle bolster flares the material outward in all directions. Carved and finished for both beauty and comfort, the bolster begins a handle that sees an heirloom-fit ring of brass separate damascus from a naturally elegant piece of amboyna burl, secured to the blade’s hidden tang by a single, brass pin.
