Meet, the Micro-Santoku. At 126mm / 5″ long, with a 26mm-tall heel that allows it to rock on the board as needed, the compact blade enjoys Don’s incredible free-hand convex bevel geometry, and a full-distal tapering along the spine to produce a tool that can perform nearly any cut during daily meal prep. Boasting his beautiful rainbow quench, Don reveals this carefully orchestrated differential hardening of the 26c3 ‘Spicy White’ carbon steel through his well-loved polishing and hand-sanding process. To complete the one-of-a-kind build is a handle in Don’s shield-profile wa handle rendition, tapering from back to front with a combination of flat and curved faces that are as comfortable and ergonomic as they are visually arresting. Sculpted from stabilized maple, the grip is capped with a ferrule of lime-green translucent G10 laminate and secured with a single flush brass pin.
