A beautifully elegant chef’s nakiri has arrived from Tasmania. Crafted by bladesmith Jason Ellard, the satin-finished 52100 carbon steel is shaped to move through vegetables with ease. Tall, superb convex bevel geometry slims downward to a very thin, hard, and razor-sharp edge that extends 148mm / 6.8″ outward from the 63mm-tall heel. Rounded and polished each, the choil and blade spine are comfortable in the pinch grip and present a wonderful aesthetic contrast to the neighboring surfaces. Balancing just over an inch in front of the handle, this push-pull chopper is weighted so as to allow the blade’s mass to its share of the work in the chef’s hand. That lucky hand which operates this one-of-a-kind culinary tool will wrap its fingers around a sculpted piece of Honduran Rosewood which the artist has selected for its striking color and natural grain. A combination of flat facets and voluptuous curves form an ergonomic, Western-style grip as comfortable as it is easy on the eyes. Completing the build is an stepped-down, heirloom-fit antiqued brass bolster capping the rosewood.
