In a rather striking feather-pattern carbon damascus steel made in-house by artist and bladesmith Joseph Schrum comes a pre-owned knife in unused condition after being refreshed and sharpened anew by the maker himself. With a blade measures 200mm / 7.8″ and stands 48mm tall at the heel, the simple, purposefully shaped profile rocks nicely on the board and tapers to a fine, very functional tip for slicing and precision cuts. Balanced just in front of the choil, the knife is fast and nimble in the hand, weighted just so, delivering a very thin edge below the short and sturdy convex portion of the compound ‘S-grind’ bevels. And we can say as much about the handle. Slightly tapered back-to-front in beautiful bog oak, the octagonal form includes the addition of mammoth tooth flanked by nickel spacers.
