In breathtaking style, Don Carlos Andrade creates a new Alsace inspired chef knife with a gyuto-esque blade profile forged by hand at his California studio from 1075 carbon steel. A kitchen workhorse with the natural beauty of a thoroughbred, Don forges the blade to shape, delivers his trademark convex geometry throughout the bevels, hardens the steel with a clay-induced differential heat treatment, and then reveals the resulting quench line with the stunning etch and polish he is known for. Forge-finished flats display the knife’s hand-hewn origins with hammer marks visible and a touch of scale from the forging process left intact. Weighted, sturdy, and powerful in the hand, the knife balances just as macadamia wood meets steel, offering a 245mm / 9.6″ edge beneath a rigid blade spine that tapers throughout the final inches to an aggressive, pointed tip that sits low at the end of the gyuto-inspired form. Standing 52mm tall the knife rocks nicely on the cutting surface with ample knuckle clearance to complement the profile’s penchant for push-pull cuts and slicing work of all variety. For comfort and control is a striking handle sculpted from macadamia wood, shaped in Don’s well-loved shield, wa style that fills the hands with gentle curves, an ergonomic taper from back to front, and for this one-of-a-kind build, a burnt orange inlay. A custom cloth-covered saya is included.
