Don Carlos Andrade’s first stick-tang (aka hidden tang) paring knife of the year, an iconic design of this talented artist dating back a decade, is just in, fresh off his California workbench. As a formally trained chef and culinary craftsman of many decades, Don builds this model to become the companion to any chef’s large blade, designed perfectly for handheld peeling and carving work above the board, as well an infinite variety of other tasks, from slicing garlic to halving strawberries and brussels sprouts alike, to the most delicate and detail oriented work around the kitchen. A tough, hardworking, while precise 98mm / 3.9″ blade is honed from RWL-34 high-performance stainless steel, the single-alloy offering of the specialty blade steel producer Damasteel of northern Sweden. Don’s pronounced convex bevel geometry is finished with a silky, hand-sanded satin sheen, contrasted by the spine and choil’s high-polish. Rounded for comfort, the spine tapers steadily forward and remains stiff throughout, delivering an aggressive, needle-like tip that does not shy away from any ingredient. For comfort and control in his trademark shield-style wa handle profile that combines flat facets and curved faces with elegant details at every turn, Don combines stunning mahogany wood with a ferrule of micarta.
