Dressed in Malaysian Ebony sculpted into a classic, octagonal wa style handle comes a 228mm / 9″ gyuto from Yanick Puig. At his studio in France Yanick crafts one-of-a-kind kitchen cutlery in traditional Japanese form from his own house-made san mai steel, quite similar to the blade formulas made in the East for hundreds of years from which Yanick draws his inspiration. In this case, 135Cr3 carbon steel, known for its simple, clean alloying and fine grain structure, is jacketed with cladding of vintage, wrought iron to produce a beautiful, versatile, and hair-popping sharp edge with convex bevels, kasumi finish, and forge-finished flats. The rounded, polished spine tapers steadily to a razor-thin tip for detail work, while the heel stands 55mm tall for all manner of chopping. Balanced, nimble, and quick in the hand, Yanick’s work is second to none.
