Mammoth Lightning Chef 230mm

Handled in some of the most stunning fossilized mammoth tooth we have seen, Joseph Schrum of Halcyon Forge crafts a chef knife of extraordinary caliber. The blade’s homemade, go mai (five layer) steel formula presents darkened 1.2519 high carbon steel hugging a lightning bold of pure nickel, with stunning, damascus-esque alloy banding throughout the bevels. This layered formula is on full display throughout the blade’s spine and tang as well, each of which taper steadily from a 4.4mm width above the heel to just 1mm an inch from the tip, and in the other direction to 2mm across at its furthest point. Gorgeous fit and finish with a comfortable, elegant sculpted form and hand-peened bronze pins complete the handle. Equally as thoughtful and meticulous is Joe’s shaping of the blade, delivering a razor thin, near-zero edge below superb convex bevel geometry that results in a daily driver with the versatility to tackle every cut in the kitchen. The previously mentioned full distal taper along the rounded, polished spine further adds to the dynamic nature of the blade, with material and strength in the rear for chopping tasks and tougher ingredients, and an extremely fine tip and forward section for finesse and precision. Balancing just shy of an inch in front of the 53mm tall heel, this work of culinary art feels as natural and powerful in the hand as any chef could ask for.
