The moment has arrived: Don Carlos Andrade paring knives tend to be rare birds, and this one-of-a-kind build is the first of the 2024 holiday season to grace our collection. Dressed in vintage ‘Oatmeal’ Westinghouse micarta, the sculpted Western style full-tang handle is as comfortable as it is handsome, secured by three hand-peened brass pins and a single, intricate, multi-color mosaic pin in the center. Although it may try to steal the show, the handle is but the conduit to the hard-working blade, shaped from RWL-34 high-performance stainless steel, a blade-specific material made in small batches by Damasteel in northern Sweden. Don gives his pronounced and impressive freehand convex bevels, tough and robust above a thin edge, a silky, hand-sanded satin finish contrasted by the polished and rounded blade spine and choil. The spine tapers steadily forward from 2.5mm out of the handle to an especially fine, needle-like tip designed to perform any number of delicate and detail-oriented cuts. Whether working on the cutting board, or to peel, carve, and perform other handheld work above the board, this outsanding chef’s companion will be there through thick and thin.
