Petit in form compared with the average gyuto, this one-of-a-kind creation by artist Don Carlos Andrade is big on performance, toughness, and character. For the incredibly handy and versatile blade profile, Don selects 1065 carbon steel which he forges to shape by hand at his California studio. A formally trained chef and bladesmith of nearly two decades, Don employs this lesser known, medium-to-high carbon tool steel due to the fact that most culinary knives for much of the last couple of centuries would have been made out of similar steels, known for their durability, strength, and ability to take a sharp, hard-working edge. Prized for its use in traditional Japanese katanas, 1065 is ideal for blades requiring a sharp edge and resilience. From light butchery and breaking work with its pointed, triangular tip, to parting and slicing the hardest and densest ingredients, this 135mm / 5.3″ blade is designed as a workhorse of home or professional kitchens alike. As expected of Don’s work in any steel, the pronounced convex bevels receive a stunning, hand-sanded satin polish and etch that reveal the hamon line of Don’s differential hardening and careful quench. To control the razor-sharp edge is a handle in Don’s recognizable style, sculpting handsome African Blackwood into his shield-style wa handle rendition and finishing it with his trademark round inlay of translucent green G10, a matching ferrule, and a single mosaic pin.
