With its beautifully sculpted, ancient bog oak handle, carved damascus ferrule, and forged 26c3 ‘Spicy White’ blade, this heirloom gyuto from Romania’s Toma Fenes is a one-of-a-kind sculptural tool to treasure, and use. The head-turning looks are complemented by versatile performance on the cutting board. Designed for daily cooking in kitchens large and small, the 200mm / 7.9″ blade delivers a sharp, thin edge below superb compound ‘S-grind’ geometry, that, with its Eastern-inspired profile, will excel at both push-pull chopping tasks, and long, precise slices with the hard edge and fine, pointed tip that sits low in relation to the handle. The profile has enough belly to rock nicely on the board, and the blade spine and choil are both rounded for comfort in any grip. Etched and polished to a silky, satin finish, the blade reveals Toma’s excellent hardening process and the resulting hamon line. To control the knife that moves like butter in the hand with its balance point about a centimeter in front of the choil is an elegant, long, and comfortable handle that we cannot get enough of. Bog oak is carved into a hybrid Eastern-Western form with understated details, secured by a domed copper pin, and matched to a copper ring and forged damascus ferrule that each feature a wonderful, museum-style fit. Whether for daily meal prep or tableside carving for special occasions, our newest bladesmith, at just 19 years old, has delivered an outstanding piece of culinary art.
